Have you ever looked at a bag of specialty coffee and felt like you were reading a chemistry recipe?

In addition to the country of origin, altitude, and variety, there is always one more mysterious piece of information listed: Process (or processing). Most often written Washed or Natural, but lately, wild terms have been appearing, such as  Anaerobic or Carbonic Maceration.

Why should you even care? Because this one little word hides the answer to the question: "What will my morning coffee taste like?"

Today, we're going to break down this coffee science into simple parts – no complicated definitions, I promise! 👇

🔎 Why is the process even important?

Before the coffee bean arrives in roaster and then into your grinder, is actually pit inside the fruit (coffee cherries). Once harvested from the bush, this pit must be removed from the succulent fruit pulp and dried.

The way farmers do this drastically changes the chemical composition of the bean. Think of it like cooking – if you boil, bake, or ferment the same ingredient, the final flavor will be completely different. The process listed on the bag tells you what kind of coffee character you can expect.

🏛 A classic that never disappoints

First, let's look at the two traditional processes found in 90% of specialty coffees.

☀️ Natural (Suhi postopek)

After harvesting, the coffee cherries are simply spread out in the sun (often on large "African beds") and dried whole, along with the fruit pulp. During the drying process, the bean literally absorbs the sugars from the fruit.

What does it taste like? These coffees are exceptionally sweet, with a full body and intense notes of berries, tropical fruit, or even chocolate. Perfect for those who love fruity and rich flavors.

💧 Washed (Wet process)

Here, the coffee goes for a "shower" immediately after harvesting. Special machines are used to remove the pulp, the beans are washed with water, and only then are they set out to dry.

What does it taste like? These coffees are exceptionally clean, light, and elegant. Since there is no fruit pulp, the true genetic character of the bean itself comes to the forefront. Expect wonderful citrus notes, floral aromas, and refreshing acidity.

🧪 Wild Lab: When Processing Becomes Science

In recent years, coffee producers have become true "mad scientists." Drawing inspiration from winemaking and craft brewing, they have begun experimenting with controlled fermentation. The results? Absolutely insane flavors!

🛑 Anaerobic fermentation (Anaerobic)

Coffee cherries are sealed in large, airtight stainless steel barrels and completely remove oxygenIn this environment, specialized microbes begin to break down sugars in a different way than they do in the presence of air. Fermentation takes place over a longer period, while the pressure and temperature in the barrels are strictly controlled.

  • Flavor profile: These coffees are real "flavor bombs." They feature exceptionally wild, winey notes, with flavors of ripe tropical fruit, cinnamon, cloves, or even yogurt. The texture is often thick and creamy.

🍇 Carbonic Maceration

A process borrowed from the world of premium red wines (Beaujolais!). It is similar to anaerobic fermentation, except that   is injected into the barrels under pressure.ogljikov dioksid (CO2)This allows fermentation to take place inside each individual coffee cherry before its skin bursts.

  • Flavor profile: Exceptionally complex coffees with strong perfumy, floral aromas, and notes of red wine, raspberry, and banana. Despite their intensity, they maintain incredible elegance.
