Gaggia Classic Evo

The Gaggia Classic Evo is a 100% Italian single-boiler dual-use espresso machine and is a great choice for new home baristas. In 2023, Gaggia introduced the Classic Evo model, which built on these foundations with a new OPV for extraction at 9 bar, updated steel components and a protective coating to prevent corrosion and boiler scaling. Like the machines for professional users, the Classic Evo is equipped with a three-way solenoid valve, a 58mm commercial portafilter and a commercial-style steam wand.

Features and benefits

The appeal of Gaggia Classic machines has always been in their adherence to specialty coffee standards. Espresso is now brewed at 9 bar pressure, thanks to the update of the OPV spring. To improve longevity without sacrificing quality, Gaggia has kept the Classic brass cooking group, but updated the group cover with a new polished steel lining that won't chip or flake over time. Gaggia has also updated the 58mm commercial portafilter, replacing the chromed brass with stainless steel to better match the group and eliminate visual flaws that may have occurred with the previous design.

The exterior has changed little, apart from a shinier band cover. The Classic Evo is still housed in a one-piece steel frame and has a set of high-quality toggle switches and matching LEDs to control the device. After cooking, a dry and easy turn-off of the donuts is possible thanks to the three-way solenoid valve that drains the waste water directly into the drip tray. The commercial 58mm stainless steel portafilter retains heat for temperature stability and is compatible with a wide range of premium portafilter baskets, tampons and other preparation accessories. Classic Evo uses a commercial stainless steel steam wand to froth milk.

Inside, the Classic Evo is put on a firmer footing with an updated mounting plate that secures the pump and boiler and reduces noise generated by vibration. In addition, special attention was also paid to the boiler, which is now protected with an inert anti-scale coating, which is safe for food and helps prevent the formation of scale and extends the life of the appliance.
