🟤 Why do we roast coffee at all?

When you hold green coffee beansin your hands, it's hard to imagine that something as rich as your favorite cup of coffee comes from them. Green beans are hard, almost odorless, and lack the characteristic flavor. Everything we love about coffee – the intoxicating aroma, the delicate sweetness, the notes of chocolate, nuts, fruit, or even flowers – only develops during roasting.

. During roasting, real chemistry happens: sugars caramelize, proteins break down, and over 800 different aromatic compounds are created. These compounds are what give your coffee its character – from light and vibrant to dark and full-bodied. In fact, you could say that coffee is born only when we roast it. 🤎

📜 How did coffee roasting begin?

The history of coffee is full of legends. The most famous is the story of the Ethiopian shepherd Kaldi, who in the 9th century noticed that his goats became unusually lively when they ate the red berries of the coffee tree. Initially, people prepared coffee by boiling the raw beans in water like tea – but the taste was nothing special.

The turning point came when the beans accidentally fell into a fire. 🔥 They began to crackle and emit an intoxicating aroma. Curious monks ground them and brewed them… and thus the first true cup of roasted coffee was born. From there, the practice spread through the Arab world to the Ottoman Empire, and then to Europe, where coffee quickly became the drink of scholars, artists, and merchants.

🔥 Roasting methods and the flavors they create

Roasting coffee is similar to cooking: a longer or shorter time over heat completely changes the final taste.

  • Light roast 🌱

The beans remain more acidic and fresh, with a flavor reminiscent of citrus, floral notes, and fruit. Ideal for filter coffee (V60, Chemex, Aeropress).

  • Medium roast 🍯

The most balanced level – sweetness is achieved, some acidity is lost, and the flavor is rich and complex. Excellent for both espresso and filter.

  • Dark roast 🍫

The flavor becomes stronger, more bitter, with notes of chocolate, caramel, and nuts. Best suited for espresso, Turkish coffee, or lovers of strong coffees.

☕ The magic of the first crack

During roasting, the beans lose moisture, turn brown, and begin to expand. At approximately 200 °C, a special moment occurs that roasters call "first crack" – the first crack. The beans pop similarly to popcorn 🍿. This is a sign that the coffee has reached the point where it is roasted and ready to be enjoyed.

If roasting continues, we reach the "second crack", when the beans crack a second time, oils are released, the surface becomes shinier, and the flavor becomes darker, more bitter, and smoky. Every second between the first and second crack is crucial – this is the moment where your coffee's character is created.
