What is the key ingredient in coffee? 👀

💧 Water – the key ingredient in great coffee

When we talk about coffee, we often discuss the quality of the beans, the degree of roasting and the preparation method. But we forget that more than 90% of a cup of coffee is actually water. And this has a huge impact on the final taste and the lifespan of the coffee machine.

What is hidden in tap water?

Tap water is not just H₂O. It contains a number of dissolved substances that affect coffee brewing:

Minerals such as calcium (Ca²⁺), magnesium (Mg²⁺) and sodium (Na⁺) are naturally present in water and determine its hardness.

Chlorine and chlorine compounds, which are added for disinfection, can give coffee an unpleasant aftertaste.

Limescale (precipitation of calcium and magnesium salts) builds up in appliances and causes malfunctions.

Why is it important to filter water?

Coffee flavor

Unwanted substances in water mask the aroma of coffee beans, and chlorine adds an unpleasant, chemical aftertaste to coffee.

⚙️ Coffee machine lifespan

Limescale builds up inside the appliance, reducing heating efficiency, causing breakdowns and the need for expensive repairs.

What about manual coffee brewing methods?

Filtered water is not only important for espresso machines, but for all coffee preparation methods :

With pour-over methods (e.g. V60, Chemex), pure water allows for a cleaner extraction and a clearer flavor profile .

With an Aeropress or French press, the water is in direct contact with the ground coffee – if the water smells or tastes like chlorine, your cup will too.

Filtration also reduces calcium , which can alter the extraction rate and cause unpleasant bitterness.

➡️ Good water allows coffee to truly shine.

When water is properly filtered, you can smell all the nuances of fruity notes, chocolate, or flowers that are otherwise obscured by impurities.

The solution? Water filtration at home and in the appliance

For optimal water quality when making coffee, we recommend a combination of BRITA jugs for general use and AquaGusto filters for filtration directly in the coffee machine:
